#classic #carrot#cake#ideal recipe.

This classic CARROT CAKE is the ideal recipe to begin with. I must tell you I tried many carrot cake and this is my favourite recipe. Mixture of dry ingredients and aromatic spice's to make deliciously moist and fruity cake.
If you love icing you can add topping off silky smooth cream cheese icing.


course           : Dessert

Prep time .    : half an hour
Cooking time: 35 to 45 minutes (adjustable)
Total time     : 1 hour and 15 minutes
Serving .        : 10 slice


For the cake

  • 2cup (250gms) all purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 and half tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1 tsp vanilla essence
  • 4 eggs large in size
  • 3/4 cup vegetable oil
  • 1 and 1/2 cups (300gms) light brown sugar
  • 1/2 cup (100gms) granulated sugar
  • 3 cups (300gms) grated carrots.
  • 3/4 cup chopped walnuts

To make the carrot cake:

  1. Firstly take a pan spray it with cooking oil spray and set aside. if you don't have cooking oil spray  , you can use cooking oil and brush, spread it all over the pan and sprinkle some flour.
  2. In large mixing bowl add the flour, baking powder, baking soda, cinnamon, nutmeg and salt , mix it together. Set aside.
  3. Take a muslin cloth and squeeze the carrot and remove the excess water.
  4. In separate mixing bowl, add oil, brown sugar and granulated sugar. Now whisk until fully combined and fluffy.
  5. When the mixture is ready add one egg at a time. Whisk it properly.
  6. Now add grated carrots into the wet ingredients and mix it well.
  7. Pour the dry ingredients into the wet ingredients bowl, mix it with whisker or spatula, make sure not to over mix it.
  8. Pour the batter evenly and bake it for 35 to 45 minutes depending on the pan at 180°c.
  9. If the top of the cake is not set in the given time you can bake it for next few minutes.
  10. Insert a toothpick into the center of the cake if it comes out clean it means cake is done.
  11. Now allow the cake to cool down.
  12. Once the cake have cooled remove from the pan .
  13. Serve with the cream cheese frosting.
  14. Yummy.


  • When measuring your flour, don't scoop it out of the container.
  • You can use 1/2 cup of raisins if you like.
  • You can also make carrot cup cake with same batter but it will take only 15 to 20 minutes to get baked at 180°c.
