Besan Burfi

"Besan Barfi"  

Besan Barfi or Besan chakki is a sweet dish. Besan barfi is basically gram flour fudge made with gram flour, clarified butter (Ghee), sugar and dry fruits . its a common sweet in india and basically prepared for marriage and festive occasions. This is topped with rich dried fruits and flavoured with cardamom powder.  Besan barfi is made by roasting besan " chickpea flour" and adding sugar syrup with Clarified Butter. its a very simple and easy recipe. 
With Besan the texture of the sweet is smooth and due to no Milk added, the sweet can be stored for at least two weeks in air tight containers.

Now lets go through easy and my version of besan in Chakki or Barfi.

Besan barfi-

there are different methods to make "BESAN BARFI" you can make as per your convince.

  1. first method:-

Main Ingredients:-

  • 2 cups gram flour ( २ कप  बेसन )
  • 1/2 tsp of green cardamom powder (१/२ चम्मच हरी ईलायची पाउडर  )
  • 10-12 slivered Pistachios (१०-१२ पतले  कटे पिश्ता )
  • 10-12 Almonds slivered (१०-१२ पतले कटे बादाम )
  • 1 cup powdered sugar ( १ कप बारीक़ पिसी शक्कर )
  • 1 cup + for greasing pure ghee (१ कप  घी)

Method:- ( विधि )

  1. Heat  the ghee in a non-stick pan or kadai, then add gram flour ( besan) and saute on low heat, stirring continuously for 10 to 15 minutes or till it starts changing colour and is fragrant. 
  2. Add the cardamom powder, pistachio and almond slivers, and mix well. 
  3. Remove from the heat and keep aside to cool down.
  4. Add the powdered sugar and again mix well. 
  5. Grease a six-by-eight aluminium straight- sided shallow tray with ghee. 
  6. Pour the gram flour mixture into the tray and spread it evenly with a greased spatula by pressing it. 
  7. Let it cool down properly 15-20 minutes. 
  8. Now cut it into squares or diamond shape and serve. 
  9. Store the Barfi in an airtight container. 

2.Second method :- 

this method is littel typical from first method. this method have many steps.

Main ingredient's :-

  •  2 cups/ 210 gms chickpea flour
  • 1 cup sugar/200 gms sugar.
  • 1 tsp cardamom powder
  • 1/2 cup clarified butter
  • 5 -10 almonds sliced
  • 5-10 cashew sliced
  • 1 tbsp of melon seeds optional


  1. take ghee in a heavy kadai and let it melt, keep the flame low.
  2. once the ghee is done, now add besan. please be careful use heavy bottom so that you can roast the besan evenly. dont let it burn.
  3. mix well and continue to stir the besan .
  4. Ghee will be absorbed by the besan and mixture getting thicker.
  5. continue to stir.
  6. now you will see that the besan mixture will become like one whole lump of mass/ getting thicker/ granular.
  7. stir for few more minutes, till the ghee released from the sides of the mixture.
  8. you can smell the nice nutty aroma and golden color.
  9. stir few more minutes, do not stop in between.
  10. once the besan is done add one tsp of cardamom powder.

preparing sugar syrup :-

  1. In another pan, take 1 cup of sugar and 1/2 cup of water.
  2. keep the pan on a low medium flame.
  3. with the help of spoon stir well, so that  

Note: Saute the gram flour on low heat, keep stirring and don't let it burn.
